Of some soups, home-made versions exist in many countries. Including Beetroot Soup, in Poland it's called Barscht, in Ukraine Borscht and in Russia Borstjt, and there are probably many more Eastern European regions where a home-cooked variant is eaten.
They all have one thing in common; the red beet.
A perfect earthy vegetable that is cooked along in soup to achieve a higher flavour level.

This is our version, developed together with Svitlana from Ukraine, who works at Kleinstesoepfabiek. A brave woman, fled from the war, together with her daughter Sophia. After three versions she decided, this one is good!

Creamy beets together with the freshness of tomato purée, protein from black-eyed white beans (which are now cooked red), our famous slowly sautéed onion, and red miso for the umami. Kombu seaweed and savoury ensure a lighter digestibility of the legumes.

Heat in a pan, dilute with half a jar of water (200 milliliters)
